UCM/ETH03  is shown below

The older UCM/Eth02 (replaced by UCM/ETH03) is shown here.
The most visible difference is the the ETH03 submodule is larger than the ETH02 submodule.

The UCM/ETH01 is shown below

The PCB size of UCM/ETH03,  UCM/ETH02 and UCM/ETH01are the same despite the apparent difference in the scaling of the images
UCM/ETH01 and UCM/ETH02 are no longer in production

The UCM baseboard (part number UCM06) is the same (or equivalent) for all the 3 UCM/Eth modules.

It is possible to buy the ETh03 submodule to replace the ETH02 or ETH01 suibmodules on the older UCMs

However the UCM06 baseboard firmware should be upgraded to the latest 7.xxx

Shouldn't also the UCM have a U2 socket which isn't present on your UCM/Eth1 example picture?

Yes it should have a U2 Socket, but there may not be an EEPROMThat was an old photo
If the EEPROM is not there it has to be purchased
The very old UCM01 cannot be used for ETH03
